Grandma's Famous Rhubarb Betty

My grandmother's recipe. Our family members can't get enough of this at get togethers.

DRY MIX (COMBINE ALL):
1 Cup Brown Sugar
1 Cup Flour
1 Cup Oatmeal
3/4 Cup Crisco
1 Teaspoon Cinnamon
1 Teaspoon Salt

TOPPING (COOK UNTIL CLEAR & THICK, STIR CONSTANTLY):
1 Cup Sugar
1 Cup Water
2 Tablespoon Corn Starch

8" X 8" BAKING DISH:
1-Layer of Dry Mixture
2-Layer of Rubarb (4 Cups???)
3-Layer of Dry Mixture
4-Topping
5-Bake for 45 Minutes at 350 degrees

When I do the dry mix I put the Crisco in the microwave to melt it
before I put it into the mix, it makes it easier to combine.

Bishop's Chocolate Pie

1 T. Knox Gelatin
1/4 c warm water
1/2 cup boiling water
6 oz chocolate chips
salt and vanilla
1/4 c sugar
2 eggs
1/2 c chopped nuts
1 c whipped cream or Cool Whip
9" graham or chocolate cookie crust
Additional Cool Whip for top of pie

Dissolve gelatin in 1/4 c warm water
Melt chips in 1/2 c boiling water
Beat eggs, sugar, salt and vanilla
Stir in gelatin and chocolate
Add nuts and 1 cup whipped cream or cool whip
Pour into crust
Let cool and top with Cool Whip, shaved chocolate and nuts if desired. A little swirl of caramel topping also is good
Refrigerate
